E39 oil and gunk question

Hi
I'm being tempted by an e39 530 sport (2002). I'd like some help with a couple of questions:
1. When I took off the oil filler cap the inside looked like it had butter / mayonnaise smeared over it. Is this good or, as I suspect, bad?
2. There was a lot of gunk on the oil filter pot. Again a good or a bad sign? Just a weak seal?
 
Car had been sitting for a while, started fine but sounded a bit like a steam engine on full chat when it was running......
 
Any help gratefully received!

It's on a dealers forecourt, and has been for a wee while, based on my auto trader spotting. My googling suggests the head gasket is suspect as I also saw a couple of other cars that were cold starts and the oil filler caps had nice clean oil on them.
I thin the dealer's comment that I should have phoned before hand so he could have had it properly prepared was telling. I've already sprinted away!

If you havn't got someone there with you who can look with you then walk away, it may only be that it has done short runs but there are plenty of other cars on the market
